Seafood Stew
This recipe is my own creation, born one night long ago when my wife refused to cook. It extremely easy to make and has been a big hit with my students & family.
Serves 4
Directions:
- Boil all seafood in a large pot or Dutch oven.
- Drain off all water.
- Add soup, salt & pepper, and stir thoroughly.
- Cook over Low to Medium heat, stirring often to keep it from sticking, until it is bubbling. Remove from heat.
- Serve with garlic bread, biscuits or crackers, or use moderately hollowed-out bread bowls.
Excursions:
- Add 1 medium sweet green (bell) pepper, seeded & diced.
- Add 1 small onion, diced.
- Add some fresh or frozen peas (canned peas will be too soft).
- Add a dash of celery salt when boiling the seafood.
- Add fresh ground pepper and/or sea salt after ladling stew into each bowl.
A Caution:
I have learned … the hard way, of course … that scallops contain a high amount of purines, which can contribute to the formation of kidney stones. So for health reasons I have had to eliminate scallops from this recipe whenever I prepare it now. Another option is to drink a full glass of water before and after consuming each bowl to help flush the purines from the body.
