Breakfast Burritos
Here is another instant-hit recipe my wife has recently added to her repetoire … mainly because of our excellent potato harvest.
Please note: Proportions for this recipe are given on a per-person basis. To feed a family of four, for example, multiply everything by 4. Also: For efficiency, use two skillets -- one for the eggs & potatoes, and the other for the bacon.
Directions:
- Before adding ingredients or turning on heat, coat inside of your frying pan(s) lightly with cooking spray to help prevent sticking.
- Beat eggs & water or milk, and add salt & pepper to taste.
- Pour egg mixture into skillet, and stir in onion and green peppers.
- Cook 10-15 minutes over Medium heat, stirring often, until eggs are firmly scrambled and most of the moisture has evaporated.
- Turn off heat, and quickly stir in the shredded cheese until it melts. Remove from heat, pour into a separate bowl & set aside. A microwave oven with the door ajar, so that only the interior light is on, makes an ideal food warmer.
- Wash and re-treat your skillet with cooking spray.
- Fry the bacon strips until they are crispy enough to crumble.
- Remove bacon strips to a paper-lined plate to dry & cool.
- If you have an extra skillet, treat it with cooking spray and stir-fry the potatoes in the oil while the bacon strips are frying in the other skillet. Use Medium heat, stirring often, until the potatoes' insides are soft and the outsides are browned. Length of cooking time will be much faster if you start with fresh potato pieces that have been blanched; that is, boiled in water for 3-5 minutes.
- Spoon egg/cheese/vegetable mixture and potatoes, along with 1-2 strips of whole or crumbled bacon, onto tortilla, leaving enough room to fold it closed.
- Serve with any of the following optional toppings, either before or after closing tortilla: guacamole, sour cream, salsa, chopped tomatoes, cilantro sprigs, lime wedges.

Excursions:
- Corn tortillas may be dipped in a separate skillet of hot oil for a few seconds to soften them so they won't break when closed. Use kitchen tongs, and dry the tortillas between sheets of paper towel prior to filling & rolling.
- Substitute a tablespoon of the bacon grease for the oil when frying the potatoes … but be very careful when handling hot grease. Do not pour any animal fats -- hot or otherwise -- down your drain because this could clog it, especially if your home is on a septic system. If possible, pour it into a metal can, and let it cool for several hours before throwing it away. If you have to use a glass jar, add a metal spoon to the jar before pouring in the grease, to absorb the heat, or you may risk shattering the glass.
- You can create your own cheese blend by combining any of the following shredded cheeses: Cheddar, Colby, Monterey Jack, Pepper Jack, and Queso.
